The night I met Chef Eyal Shani chez Calvin in Geneva


A few weeks ago, one of my wildest dreams came true. I met my idol, Chef Eyal Shani in one of my favorite restaurants in Geneva, Chez Calvin, owned and operated by my very talented friend Fabian Affentranger.


I had the chance to eat Chef Eyal Shani's food many times in the past, in Tel Aviv mostly, but also in Paris.


When I found out that Fabian had the idea to transform his brasserie into a North Miznon, I was just thrilled. I immediately booked a table for 8 people on the opening night, hoping that the Chef would be there. And I have been going back regularly since.



There are so many restaurants in Geneva, so what makes this one so special, you may wonder. Well, let me tell you.


First, Eyal Shani's cuisine is just incredible.


On his menus, veggies are stars (don't forget, he is the one who created the baked cauliflower you have been craving and enjoying in many restaurants around the world for the past 10 years).


Whatever you choose on the menu, there is an almost instant feeling of warmth and comfort when eating his food. And boy do we need warmth in our busy lives.



Many of the dishes are presented directly on the table. Watching the chef work his magic so closely has been one of the most exciting experiences in my life.


It can be quite unsettling seeing the chef cut two giant chickens with a huge knife and his bear hands. And that's the goal. Something's happening. You're surprised. You are not quite sure what you're supposed to think or feel. And I freaking love it.


When you meet Chef Eyal Shani, you understand better that his cuisine is very aligned with his playful personality.




You see, North Miznon chez Calvin isn't only a restaurant. It's an adventure. It's a temple of hospitality.


Service is attentive and proactive. Magically, you wine glass is being filled before you even noticed it was empty. The ballet of waiters bringing food and clearing empty plates without you even noticing it, is priceless.


They know what they are doing. They have mastered the art of EAT-terainment. At the beginning of the night, the cool music sets a very enjoyable vibe. But as the evening turns into night, the music becomes louder and louder, and just like that, you find yourself dancing in front of the bar with strangers.

January, 25th 2024 turned out to be one of the best nights in my life. And for that I will be forever grateful to Fabian and the entire team of North Miznon Chez Calvin.
